The association's goals are to
- study and implement all the measures designed to improve the production, processing, promotion and sales of dairy products intended for the production of Laguiole cheese
- defend and promote the Laguiole cheese appellation d'origine
- defend the interests of producers and producers of dairy products used to make Laguiole cheese
- draft the schedule of specifications and help operators implement it (technical actions and genetic follow-up)
- jointly draft a monitoring or inspection plan with the inspection body.
