The association's structure

The Laguiole cheese association is a Defence and Management Organisation comprising all the operators involved in the appellation d'origine schedule of specifications, in other words anyone who effectively participates in the production, processing or development activities it spells out. In 2011 the association had 75 members: dairy producers or farmers and a processor.

Organisation

1) A board of directors whose members come from the following three groups:

  • dairy producers: six to 10 members
  • cheese processing and ageing companies: two to four members 
  • farm producers: one member.

2) Management of the Laguiole AOP inspection plan:

Under the supervision of the INAO and subject to its validation, the Laguiole AOP association drafts an inspection plan covering the entire process, from producer to finished product, in order to ensure the quality of Laguiole AOP cheese. Inspections are made throughout the process.

THE COMMANDERIE

La commanderie

The Commanderie of the Chevaliers du Taste-Laguiole et des Grands Fileurs d'Aligot de l'Aubrac is a confraternity founded in 1997 to promote Laguiole cheese and Aubrac aligot at public events, when its members don outfits similar to the habits worn by the Aubrac monks who invented those local products. The Commander is André Valadier. The commanderie fulfils its role alongside the association and the Jeune Montagne cooperative.
